Spring Rolls

Ingredients:
Rolls
1 packet of Ideal Protein plain crepe
1 tbsp extra virgin olive oil
2 tsp soy sauce
1 egg white (optional)
1/3 cup water

Sweet Pepper Filling
1 tbsp margarine
1/2 red bell pepper, finely chopped
1/2 orange bell pepper, finely chopped
2 inches English cucumber finely chopped
3 shiitake mushrooms, finely chopped
lemon juice to taste
soy sauce to taste
salt, pepper and steak spices.

Preparation:
Rolls: in a medium bowl mix water, olive oil, soy sauce and egg white. Add plain crepe packet and whisk well. Cook crepe in a skillet.
Pepper filling: in a skillet cook bell peppers and mushrooms in margarine. Add cucumbers, soy sauce and lemon juice. Season with salt, pepper and spices. Place filling in crepe and roll up. Bake in oven on Broil until crispy, about 5 minutes.

Bok Choy Salad

Ingredients:
Dressing:
1/4 cup extra virgin olive oil
2 tbsp rice vinegar
1 tbsp Splenda or Stevia
2 tbsp soy sauce

Salad:
2 cups baby bok choy
1 bunch green onions, chopped
1 sweet red pepper, sliced
1/4 cup silvered almonds, toasted

Preparation:
In a glass jar with a lid, mix together oil, vinegar, Splenda and soy sauce. Shake until well mixed. Combine the bok choy, green onions, red pepper and almonds in a salad bowl. Toss with dressing, and serve.

Bok choy is similar to celery and swiss chard. Its white stems are mild, juicy and crunchy. Its veined leaves are dark green and milder tasting than those of cabbage. There are many varieties of bok choy. Cooked bok choy is an excellent source of vitamin A and potassium. It is also a good source of vitamin C and folic acid, and also contains vitamin B6, calcium and iron. Serve this salad with fish or Ideal Protein fine herbs and cheese omlet.

Green Beans with Sweet Onion Dressing

Ingredients
Dressing:
1 cup finely chopped sweet onion
2 tbsp wine vinegar
2 tbsp grainy Dijion mustard
salt and pepper to taste
3 tbsp extra virgin olive oil
1/2 cup finely chopped Italian parsley

 Salad:
2 1/2 lb green beans, trimmed
16 radishes, sliced paper thin. 

Preparation:
Stir together onion, vinegar, mustard, salt and pepper in a large bowl. Marinate about 10 minutes. meanwhile, cook beans in a large pot of well salted boiling water, uncovered, until just tender about 6 minutes.Transfer to large ice bath to stop cooking. Drain and pat dry. Whisk oil and parsley into onion mixture and then toss with beans and radishes. Pairs well with veal chops or Ideal Protein chicken soup

Vegetarian Pizza

Ingredients:
1 packet of Ideal Protein Plain Crepe
1 tbsp extra-virgin olive oil
1/2 small clove garlic, minced
Dried Italian herbs
1 egg white (optional)
1/3 cup water
Red bell pepper or tomato sauce
vegetables of your choice
Salt, pepper, spices and herbs of your choice

Preparation:
In a medium bowl, mix water, olive oils. garlic and Italian herbs and egg white if using. Add plain crepe packet and whisk well. Cook crepe in a skillet. Spread red bell peppers or tomato sauce on cooked crepe. Garnish with chosen vegetables and season with salt, pepper and herbs. Bake in oven at “broil” until vegetables are nicely grilled about 5 mins.

3 Mushroom Market Salad

Ingredients:
Salad (can be halved if needed)
1 cup sliced portabella mushrooms
1 1/2 cup button mushrooms
1 cup sliced shitake mushrooms
3 cloves garlic, minced
3 tbsp extra virgin olive oil
salt & pepper to taste
8 cups of mixed greens, spicy greens such as mustard, arugula and watercress for example.

Dressing
1/3 cup extra virgin olive oil
3 tbsp wine-vinegar
1 1/2 tsp Dijion mustard
2 tbsp fresh chopped parsley
1 tbsp minced shallots
salt & pepper to taste

Preparation:
Preheat oven to 425 degrees farenheit with rack in the middle of the oven. Toss mushrooms with garlic and oil, salt & pepper. Roast in one layer in a 4 sided sheet pan, turning once until golden brown and tender, about 15 minutes. Cool mushrooms and prepare dressing. Dressing; whisk together oi, vinegar, mustard, parsley, shallots, salt & pepper in a bowl until combined. Toss mushrooms and greens with enough dressing to coat.

Mushrooms can be roasted up to 4 hours ahead and kept at room temperature. Serve this sald with grilled flank steak or Ideal Protein hearty stew.

Chinese Pancakes

Ingredients:
1 packet of Ideal Protein fine herbs and cheese omelet
Favorite vegetables ( bok choy, broccoli, cabbage, zucchini, etc)
1 clove garlic
Grated ginger
Fennel seeds
Bean sprout
Pre-cooked shrimp
Tamari sauce

Preparation:
Chop and combine veggies, ginger and shrimp in a ziploc steamer bag. Steam for a minute or two. Prepare omelet packet and either add garlic to the pan and make very thin crepe-like omelets. Spoon the veggies onto, roll and drizzle with tamari.

Other variation if you have omelet rings, put steamed veggies in a bowl and add omelet mixture ( you may need to add an egg white) saute garlic and add to omelet mixture. Pour into omelet rings and cook as usual, drizzle with tamari.

Oatmeal Pancakes

Oatmeal Pancakes
Ingredients:
1 packet of Ideal Protein maple oatmeal
2 tbsp water
1 tbsp maple syrup
1 egg white
extra virgin olive oil

Preparation:
In a medium bowl, mix water, maple syrup, egg white and oatmeal packet. Lightly oil baking sheet and lay down mixture in small pancake shapes. Bake in a 450 degree oven for 10 minutes.

2 to 3 egg whites
2 small to medium zucchinis-shredded
salt & pepper to taste
garlic (optional)

Preparation
Combine all ingredients and cook like pancakes

Spicy Beef Flank

Spicy Beef Flank
Ingredients:
 
Marinade:
1/2 Cup Extra Virgin Olive Oil
1/4 Rice Vinegar
4 Cloves garlic, crushed with the skin
1 teaspoon cumin
1/2 Bunch of Thyme
2 teaspoons crushed black pepper
2 Peppers, finely chapped
2 Bay leaves
 
Preparation:
In a large Ziploc bag, mix all marinade ingredients and set aside.  Make shallow incisions in the steak so the marinade penetrates more.  Let marinate in the refrigerator for at lease 2 hours.  Preheat BBQ  at high temperature.  Put steak on hot grill to seer.  Season to taste.  Grill to your personal liking

Cinnamon Mochaccino

Cinnamon Mochaccino
 
Ingredients:
1 Packet of Ideal Protein Cappuccino Drink
1/2 tsp Instant Coffee
1/8 tsp Cocoa Powder
A dash of Cinnamon
6 oz Water (more if you want it less creamy)
 
Preparation:
Pour cold water into a shaker and add all the other ingredients.  Shake well until completely dissolved and enjoy a scrumptous shake!
